I've been gone awhile-have some Beef French Onion Soup for comfort!


Hi! Thanks for coming back to check on me! I know I've been gone awhile, I haven't felt much like writing, but that hasn't stopped me from cooking! I'm kinda backlogged on recipes and ideas to share with you all. I guess that gives me a head start on posts, huh? Anywho~ I bought some lunch meat so that I could take a break from actually cooking. I picked up a nice variety of meats and cheeses. Turkey, roast beef, ham, a provolone and mozzarella sliced blend and some other stuff. Of course I grabbed some french rolls because I can't stand white bread unless it's  toasted. Yeah, yeah- I know, I'm a weirdo. So, after a few days of hoagies, I got bored of making sandwiches. I don't think The Man got tired of eating them, but I can't stand making the same thing over and over again. I put on my creative hat and I made him a French Dip sandwich with the roast beef and provolone. I sauteed a few onions and put those on and I made the aus jus out of a beef bouillon cube, a little cornstarch, a and a little Kitchen Bouquet. Of course, I added seasonings- pepper, onion and garlic powders. As he was enjoying his sandwich, I had a little of everything left and a light bulb went off in my head. SOUP! I can eat soup for breakfast, lunch, dinner or snack. In the heat, the cold or whatever the weather. I love all kinds of soup. I sauteed another onion in a little butter.  I pulled out my little ramekins and put the aus jus and onions in. Sliced up the roast beef and added that. I also added some croutons that I made a couple of weeks ago. I guess I'll probably have to blog about that one day. I put two pieces of cheese on top- to make sure it got to the edges of the bowl, sprinkled with fresh parsley and crack black pepper. And popped into the oven on broil.  I watched it. For real, cause I always burn stuff on broil. I waited til the cheese was bubbly and brown. Then, I took it out- took a picture and took a few spoonfuls before I was full and tired from making all this stuff!
So, don't make this soup unless you're ready to eat it all, cause it will make you tired and full and satisfied after like 3 spoonfuls.
